Courgette Moutabal (Moutabal Kousa)

A smoky, garlicky courgette dip inspired by baba ganoush - courgettes are roasted whole until soft and charred, then blended with garlic, tahini and lemon juice, and finished with sumac and parsley.

Ingredients
  

  • 590 g Green courgettes
  • 15 g Garlic
  • 1 tablespoon Olive oil
  • 1 teaspoon Sea salt
  • 1 tablespoon Tahini
  • ½ Lemon for the juice
  • 1 tablespoon Chopped parsley
  • ¼ teaspoon Sumac

Instructions
 

  • Preheat oven to 220ºC
  • Wash and pat dry the courgettes. Using a knife, stab the courgettes. Place them on a tray, add salt and olive oil. Massage the oil and salt into the courgettes and roast in the oven for 30 minutes.
  • Peel the garlic and chop the parsley.
  • Once the courgettes are cooked, remove them from the oven and cut them down the centre. Remove the flesh and add it to a blender. You can use some of the skin as well, if it's not too badly burnt.
  • Add the garlic and tahini and blend. It doesn't have to be a very smooth puree, as long as there are no visible chunks.
  • Add the lemon juice and check the seasoning.
  • Transfer the dip to a serving plate and sprinkle with sumac and chopped parsley. You can also add some pomegranate seeds. Serve immediately.
