Kachumber Salad with Sprouts

A protein-packed twist on the classic Indian kachumber- cucumber, tomato, and onion tossed with homemade sprouting mung beans and kaka chana, finished with lime and kala namak. Naturally vegan, gluten-free and oil-free.

Homemade sprouts

  • 50 g Green mung beans
  • 50 g Kala chana (black chickpea)

Kachumber Salad

  • 226 g Cucumber one cucumber
  • 100 g Red onion
  • 180 g Tomato two tomatoes
  • 1 Lime
  • 30 g Coriander leaves
  • 30 g Mint
  • 1 Green chilli
  • 1 teaspoon Kala namak

Instructions
 

Homemade sprouts

  • Rinse and soak lentils in water overnight.
  • The next day, drain and soak in water again.
  • The following day, you will see they have started to sprout. If they have (it depends on how warm it is), rinse and drain the water, then transfer them onto a plate.
    Two or three times a day, wash the legumes in running water, and leave them on the countertop, covered. The idea is to keep the legumes moist, so as to encourage sprouting.
  • By the third or fourth day, the lentils should have long sprouts. If they don't, continue the steps above.

Kachumber salad

  • Dice the cucumber, tomato and onions, roughly the size of the black chickpeas.
  • Finely chop the green chilli.
  • Remove the mint from the stem and roughly chop the leaves.
  • Roughly chop the coriander, including the stems.
  • In a bowl, add all the ingredients, including the sprouts. Season with kala namak and squeeze the lime juice. Mix to combine. Adjust seasoning as required. Serve immediately.
